Week of February 15, 2010

This is going to be an interesting 2 and a half weeks.  Nathan is leaving first for a ski trip with some friends, and then the day or so after he gets back he leaves for another 10ish days for a business trip.  This leaves me to cook for myself which is always a challenge.  I end up eating the same thing for days at a time, because I am not good at adjusting recipes.

This is probably the most boring menu ever created.

Monday:

Tuesday:

  • Breakfast – Leftover Irish Soda Bread
  • Lunch – Peanut Butter & Jelly Sandwich
  • Dinner – Class!

Wednesday:

Thursday:

Friday:

  • Breakfast – Oatmeal with Brown Sugar and Cinnamon
  • Lunch – Salad
  • Dinner – Vegetable Enchiladas {recipe to be posted} Oatmeal

Saturday:

  • Breakfast – Cheese Omelet
  • Lunch – Salad & Canned Soup
  • Dinner – Leftover Enchiladas Cheese Quesadilla

Sunday:

  • Breakfast – Cheese Omelet
  • Lunch – Salad
  • Dinner – Leftover Enchiladas Easy Spinach Dish
