Somehow I missed the one year anniversary of this blog. It was a few days ago, and I am fairly certain that I spent most of the 5th in vacation recovery mode. I’m so grateful for how much fun I’ve had writing up each recipe, kitchen adventure, and post. Here’s to many more kitchen adventures to come.
This also means that I am going to start post links to recipes from the past year. I love when blogs do that. It gives me a chance to see what else they’ve done without flipping through pages of posts.
I am admittedly not the biggest ranch dressing fan. While everyone else in college seemed to be dipping everything {including pizza…} in it, I never ate it that much. It isn’t that I don’t like it. I just think there are more interesting dressings out there.
Back in July I bookmarked a similar recipe for ranch dressing. I kept thinking I would make it, but I wasn’t super interested. Then while I was working on the October menu I decided to go for it. I wanted a big chef salad, and what better way to top it off but with homemade dressing.
One year ago today: Homemade Veggie Pizza
Ranch Dressing {adapted from Annie’s Eats}
Ingredients:
- 3/4 cup light mayo
- 3/4 cup fat free sour cream
- 1 tbs olive oil
- 1 cup fat free buttermilk
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp basil
- 1/8 tsp thyme
- 1/4 tsp chili powder
Directions:
1. Mix all ingredients in a blender. Start with 1/4 cup buttermilk and add 1/4 cup every 30 seconds or so.
2. Store in an airtight container {I used a Ziploc plastic container} for up to 1 week.
Grade: A
Comments: YUM. This was so much better than any ranch dressing I’ve ever had. It was nice to be able to control the flavors myself, and most importantly the amount made. Is there anything more gross than a container of dressing that has been in the fridge forever? Making it fresh gave me the opportunity to make it for our salads that evening and the leftovers for lunch the next day. Now that I’ve made ranch dressing I have to try to make others!
