German Lasagna

My mom left this morning after spending the week with us.  It was great to have her here so she could meet Samuel and spend a lot of time with him.  She managed to spoil him rotten with some new clothes we picked up during our shopping trips to Carters and Target.  I’m going to miss her, but I am excited that we’re going to Pennsylvania in August to see my family.

Now this week I am on my own while Nathan works.  On Sunday my in laws arrive for some time with us, but from Monday to Friday I am getting a taste of what is to come!

Now onto German Lasagna!

This recipe seemed like it could go either horribly or wonderfully.  There was going to be no in-between.  It was risky especially since Nathan told me he hates sauerkraut.  I decided to give it a shot anyway, because I love sauerkraut.

German Lasagna {from AllRecipes.com}

Ingredients:

  • 9 lasagna noodles
  • 1 can condensed cream of mushroom soup
  • 1 can condensed cream of chicken soup
  • 2 cups milk
  • 1 lb kielbasa
  • 1 20 oz can of sauerkraut, drained
  • 8 oz shredded mozzarella cheese

Directions:

  1. Preheat oven to 375 degrees.
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  3. In a blender or with an electric mixer, blend mushroom soup, cream of chicken soup and milk until smooth. Cut sausage in half lengthwise and slice thinly.
  4. In a 9×13 inch dish, layer 1 cup soup mixture, 3 noodles, half the sauerkraut, half the sausage and a third of the cheese. Repeat. Top with remaining 3 noodles and remaining soup mixture. Cover with foil.
  5. Bake in preheated oven 25 minutes, then uncover and bake 15 minutes more. Sprinkle with remaining cheese when still hot.

Comments: This was okay.  It turned out pretty liquid-y.  The taste was amazing, but I would probably have cut the milk back to a cup and a half.   Also, really make sure the sauerkraut is drained.  It will make a huge difference.  I think that I could have been more careful of that.  It definitely is very good, and the leftovers were even better than the first time around.  I ate my leftovers cold, and it was delicious!
