Banana Pancakes

I firmly believe that breakfast for dinner is one of the greatest things EVER.  I try to get it on our menu at least once a month, but I try to squeeze it in there even more.  Breakfast foods are some of my favorite to make, because I love the way they make the apartment smell.

I found this recipe on AllRecipes.com.  Fruit in pancakes is always a success in my opinion.

Banana Pancakes {slightly changed from AllRecipes.com}

Ingredients:

  • 1 cup self-rising flour
  • 1 tbs sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 cup milk
  • 2 tbs vegetable oil
  • 2 bananas {plus another for toppings!}

Directions:

  1. Preheat the griddle to 350 degrees.
  2. Combine flour, white sugar, baking powder and salt in a small bowl.
  3. Mash bananas.  I used a whisk, and it worked just fine.
  4. In a large mixing bowl, mix together egg, milk, vegetable oil and bananas.
  5. Stir flour mixture into banana mixture; batter will be slightly lumpy.
  6. Spray the griddle with oil. Pour or scoop the batter onto the griddle, using approximately 1/8 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

Grade: A+

Comments: These were SO DELICIOUS.  Admittedly, I ate 4 of them!  I couldn’t help myself.  We topped ours with bananas, butter, fat-free syrup, and powdered sugar.  The banana flavor is strong, but it isn’t overpowering.  These would be great with nuts added as well.

Banana pancakes remind me so much of my childhood. We ate them every weekend. I recently posted some pretty interesting pancakes. Olive Oil & Chocolate…It might sound wierd, but I promise you they taste great.
