Cinnamon Scones

This weekend was mostly wonderful.  Friday and Saturday brought great weather, but unfortunately Sunday was rainy and gloomy.  We were able to walk around some cute shops, eat Mexican on a restaurant patio, and spend time at the park on Saturday.

Yesterday I spent my birthday sleeping and doing homework.  Not the most exciting of days, but the rainy Atlanta weather and my complete exhaustion made it the best option.  I had planned to make stuffed peppers for dinner, but we axed that.  I’m going to stick them in the crock pot today before I leave for work.  We’ll eat them after my Junior League meeting is over tonight!

On Saturday, I made these delicious scones using Alton Brown’s recipe as a base.  I made three changes: icing, cinnamon, & I couldn’t find my rolling pin so they were made almost like drop biscuits.

Homemade Scones

Ingredients:

For the Scones:

  • 1 tbs cinnamon
  • 2 cups self-rising flour
  • 4 tsp baking powder
  • 3/4 tsp salt
  • 4 tbs butter
  • 2 tbs shortening
  • 1 egg

For the Icing:

  • 2 tbs light cream
  • 1/4 cup confectioners’ sugar

Directions:

  1. Heat oven to 375 degrees.
  2. In a large mixing bowl, combine flour, baking powder, salt, cinnamon, and sugar. Mix well.
  3. Cut in butter and shortening.
  4. In a separate bowl, combine cream with beaten egg then add to dry ingredients. 
  5. Using your hands, scoop out medium size balls of dough and place on the cookie sheet.
  6. Bake for 15 minutes or until brown.
  7. Once the scones are done, mix the light cream and confectioners’ sugar together in a small bowl.  Drizzle over the scones.

Grade: A+

Comments: These were DELICIOUS.  I bet they would be amazing with fruit in the dough as well.  I’m definitely going to get some blueberries for next time.  The consistency is perfect, and they were great with coffee.  Nathan ate his with an egg scramble {3 eggs, cheddar cheese, garlic, red pepper, tarragon, chili, light cream}, and I had mine by itself.  These would make a great brunch treat.  If I could have found my rolling pin, I would have made them a little prettier, but this worked great!

Lovely scones! Anything with cinnamon has my vote!
