BBQ Pork Sandwiches with Baked Carrots & Corn

On Friday, Nathan was responsible for getting dinner on the table.  There was peppered pork tenderloin and corn made together in the crock pot.  He did a fabulous job!  It came together really well, and it was the perfect dinner after we got back from picking up my race packet.

There was a decent amount of pork left {and I knew there would be}, so I had planned on BBQ Pork Sandwiches for dinner on Saturday night.  This recipe is so easy, and it is great if you have pork leftover.

BBQ Pork Sandwiches

Ingredients:

  • leftover pork
  • 2 cups BBQ sauce
  • 1 tbs garlic powder
  • 1 tsp chili powder

Directions:

  1. The night prior in a plastic sandwich bag mix the leftover pork with 1 cup BBQ sauce.
  2. When you are ready to cook dinner, dump the BBQ’ed pork into a frying pan.  Add garlic powder and chili powder.  Cook on low with the lid.  Stirring every 4-5 minutes.
  3. When the pork has been cooking about 15 minutes, add in the last cup of BBQ sauce.  Cover again.  Cook for about 15-20 more minutes until hot.
  4. Toast whole wheat buns then top with BBQ pork.

Baked Carrots

Ingredients:

  • 3 carrots, peeled
  • 1 tbs cinnamon
  • 1/2 tbs chili powder

Directions:

  1. Preheat oven to 450 degrees.
  2. Cut carrots into 1″ pieces.
  3. Spray a small glass casserole dish with olive oil.  Add carrots.
  4. Top the carrots with cinnamon and chili powder.  Tossing lightly.
  5. Add in 1 cup water.  Cover with aluminum foil.  Cook for 20 minutes.

Comments: The pork sandwiches turned out GREAT.  They were so delicious.  It is such an easy meal to make with leftover food.  Cooking it on low gives it an almost “smoky” taste which was delicious.  The baked carrots also turned out well.  They weren’t super soft, but they were just perfect.  The cinnamon wasn’t overwhelming.  It just gave the dish a little umph!  The corn was just leftover from the previous night that I heated up in the microwave.
