Iced Cinnamon Biscuits

Yesterday morning, one of my closest friends, Holly, came over for breakfast.  Holly and I met when the law firm where she works was my client at a previous job.  We went out for lunch once, and we’ve been great friends ever since.  Unfortunately, we both have crazy schedules, so we don’t get to see each other often enough!

However, after a few cancellations, we finally were able to sit down and eat breakfast together yesterday.  Both of us were off from work, so we agreed to meet at my apartment at 8:30.  I had originally planned to make pumpkin muffins, but the grocery store was out of canned pumpkin!  How does that happen when it isn’t Thanksgiving?

So, on Wednesday night, I looked for a replacement recipe.  I ended up finding this amazing biscuit recipe.

I made these iced cinnamon biscuits, scrambled eggs made with buttermilk and garlic, fruit salad, orange juice, and coffee.  It was the perfect breakfast to share with a good friend.

Iced Cinnamon Biscuits {from Allrecipes.com}

Ingredients:

for biscuits:

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tbs baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp baking soda
  • 1/3 cup shortening
  • 1/2 cup raisins
  • 3/4 cup buttermilk

for icing:

  • 1/3 cup confectioners’ sugar
  • 1 tsp buttermilk {recipe called for milk}

Directions:

  1. In a bowl, combine the first six ingredients; cut in the shortening until mixture resembles coarse crumbs. Stir in raisins. Add buttermilk; stir just until moistened.
  2. Turn onto a lightly floured surface; knead 4-5 times. I did drop biscuits, but if you click on the recipe it uses a biscuit cutter. 
  3. Bake at 425 degrees for 12-17 minutes or until golden brown. Combine the icing ingredients; drizzle over biscuits. Serve warm.

Comments: I thought these were really good.  They were surprisingly moist.  The cinnamon flavor is not too strong, but rather it is perfectly subtle.  They are definitely a great breakfast item, and they went perfectly with the coffee!

I would love one of them with a cup of coffee right now! They sound delicious! Lucky for you the store was out of canned pumpkin!
