Blueberry Pancakes & Orange Maple Syrup with Turkey Bacon

Last week I decided I really needed breakfast for dinner this week.  I decided it would be the perfect post-Ash Wednesday Mass dinner.  We got home from Mass around 7:30 last night, and dinner was ready to go at about 8:15!  Later than we usually eat, but not too terribly late.

I originally found the recipe on Bakerella aka my favorite baking site ever.  I needed to make a few changes, but the concept is still the same.  Also, the original recipe made 16 pancakes, and I cut it in half.  So the recipe below makes 8 pancakes.

Blueberry Pancakes & Orange Maple Syrup {inspired by Bakerella}

Ingredients:

For Orange Maple Syrup

  • 2 tbs orange juice
  • 2 tbs maple syurp

For Blueberry Pancakes

  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/8 cup sugar,
  • 2/3 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 cup buttermilk
  • 1 1/2 Tbsp butter, melted and cooled
  • 1 egg lightly beaten
  • 1 cup blueberries

Directions:

  1. Mix orange juice and maple syrup in a small container.  Heat in microwave for 15 seconds then refrigerate uncovered until time to use.
  2. Whisk together flour, cornmeal, sugar, baking powder, salt and soda in a large bowl. Set aside.
  3. Whisk together buttermilk, butter and egg in medium bowl.
  4. Add buttermilk mixture to dry ingredients and whisk together just until combined.
  5. Add blueberries to mixture and carefully fold dough.
  6. Heat a griddle over medium heat. Take extra butter and run over surface of griddle. Repeat as necessary throughout process.
  7. Pour batter on griddle 1/4 cup at a time.
  8. Cook for about 3-4 minutes.

When it comes time to serve, spread a little butter on each pancake then top with orange maple syrup.  I served Nathan’s plate with turkey bacon.  Mine was just pancakes.

Grade: A+

Comments: These are the most perfect blueberry pancakes ever.  I’ve made other recipes, but this recipe is by far the best.  The orange maple syrup was an amazing companion for this dish.  If you decide to make these pancakes, you HAVE to make the syrup.  These would be a great brunch dish or as we did it for dinner!
