Irish Soda Bread

Disclaimer: I am pretty sure this is not how you make “real” Irish Soda Bread, but this recipe sounded awesome so I decided to give it a try.  Anything that is easy and requires buttermilk is a great idea in my book!

I found this great blog, Cheap Eats, over the weekend.  I don’t remember how exactly, but it was a great find.  There are some pretty easy recipes in there.  There are some food reviews as well, but I mainly went through the recipes.  You should give it a try!

Irish Soda Bread {from Cheap Eats}

Ingredients:

  • 4 cups flour
  • 3 tbs sugar
  • 1 tsp baking soda
  • 1 tbs baking powder
  • 1/2 cup butter, softened
  • 1 cup buttermilk {I used fat-free}
  • 1 egg
  • 1/2 tsp salt

Directions:

  1. Get the oven to 375 degrees and grease a baking sheet {I put down parchment paper instead}. Mix the flour, sugar, baking soda, baking powder, salt, and butter in a bowl.
  2. Stir in 1 cup buttermilk and the egg so that you make a soft dough. You might need more (or less) buttermilk to make it right. Put some flour on a board and dump the dough onto it. Knead it slightly.
  3. Shape it into a round loaf and put it on the baking sheet. With a sharp knife, cut a cross onto the top.
  4. Melt some butter and add it to the extra buttermilk. Brush the top of the loaf well with that mixture. Pop it into the oven for 45 min or so.

Comments: Like I said, I don’t think this is how you make real Irish Soda Bread, but it was still really good.  It is a lot more filling than I expected, and it is easily breakfast for the entire week especially with Nathan leaving Thursday in the very early morning.  It is great with butter and a little cinnamon sugar!
