Last night’s class was canceled, because my professor was sick. So I ended up coming up around 5:00 rather than my usual 10:45. This meant I had to come up with something for dinner.
One of the biggest challenges of meal planning for me is that I do not deal well with unexpected meals. We only buy what we are going to use that week, so there is often not much extra food in the house sans maybe a can of soup or odds and ends of pasta.
However, it just so happened I had a box of macaroni and cheese, bacon {most of which is for Wednesday’s dinner}, and a 1/2 can of diced tomatoes leftover from Sunday’s spaghetti.
Macaroni & Cheese with Bacon and Tomatoes {an impromptu dinner}
Ingredients:
- box of macaroni and cheese
- 3 pieces of turkey bacon
- 1/2 can diced tomatoes
- 1/2 tsp garlic powder
- 1/2 tsp ground cloves
- buttermilk
- 1 tsp chopped garlic
- butter
Directions:
- Make macaroni & cheese according to box except replace the milk with buttermilk {trust me…it is way better}.


- In a frying pan cook bacon. Add garlic powder and ground cloves. Make sure the bacon is slightly burnt.


- Cut the bacon into small pieces.

- Add the tomatoes, garlic, and bacon to the macaroni & cheese.


- Serve!

Comments: Nathan said it was good. It took him a minute to get used to, but he ended up liking it. He was too distracted by the computer to give me any more detail. I didn’t have any, so I really have no insight.
