Old-Fashioned Sugar Cookies

Yesterday during my mini baking spree thanks to the snow I decided to make some sugar cookies.  We are planning to drive to Callaway Gardens on Sunday, so I thought these would be a perfect snack to take with us.  We did both sneak a few last night, but then I quickly put them away before Nathan ate them all!

Old-Fashioned Sugatr Cookies {from Martha Stewart’s Cookies}

Ingredients:

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp coarse salt
  • 1 3/4 cups granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 tbs finely grated lemon zest
  • 1 cup unsalted butter, room temperature
  • 2 large eggs
  • 1 tbs fresh lemon juice

Directions:

  1. Preheat oven to 350 degrees.  Sift together flour, baking soda, and salt.
  2. Put sugars and zest in the bowl of an electric mixer fitted with the paddle attachment.  Mix on medium speed 30 seconds.  Add butter; mix until pale and fluffy, about one minute.  Mix in eggs one at a time, and then the lemon juice.  Reduce speed to low; gradually mix in flour mixture.
  3. Using a 2-inch ice cream scoop, drop dough onto parchment paper – lined baking sheets, spacing 3 inches apart.  Flatten cookies slightly.
  4. Bake cookies until golden, about 15 minutes, rotating sheets halfway through.  Let cool completely.

Grade: A+

Comments: I’ve never made sugar cookies with lemon in them until last night.  However, it was the lemon that made these so incredibly delicious.  It isn’t a very strong flavor, but it is just enough to make them a little sweeter.  They were a perfect snowy day snack!
