Warning: this makes enough food to feed a small army!
This was my contribution to the Super Bowl food {this and the cupcakes!} at Mike and Yoko’s apartment. The four of us didn’t even eat half of what was made. Be prepared for tons of leftovers or seriously cut the recipe.
Seafood Casserole {inspired by Berea Braves Football Cookbook 2004-2005}
Ingredients:
- 1 lb imitation crab meat
- 1 can cheddar cheese soup
- 1/2 bag frozen broccoli
- 1/2 can sweet corn, drained
- 5 cups macaroni
- 1/2 bag cheddar cheese
Directions:
- Cook macaroni according to directions on box.
- Cut crab meat into bite-size pieces. Combine with macaroni, corn, and broccoli.


- Heat can of soup with water. Pour over macaroni and toss.

- Place in buttered casserole dish. Sprinkle with cheddar cheese.
- Bake at 325 degrees for 1/2 hour or until cheese as melted.

Comments: This is surprisingly delicious. I wasn’t so sure, but it turned out great! Everyone said they enjoyed it, and it was even good cold as leftovers later in the week for lunch. You could easily add shrimp or other seafood and more veggies if you wanted. The recipe is very adjustable. I made some pretty big changes from the recipe in the cookbook.
