Tuna Salad with Vegetables

I love tuna fish.  It is such a healthy choice for lunch, and I try to eat it a few times a month.  Unfortunately, I have had a bit of a smell aversion to it these past few weeks.  It has now seemed to pass, and I can once again eat one of my favorite foods.

Tuna Salad with Vegetables

Ingredients:

  • 1 can tuna fish
  • 1 tsp Miracle Whip
  • 1 carrot
  • 1 celery stalk
  • 3 cups lettuce
  • 1/2 roma tomato
  • 8-10 sugar snap peas

Directions:

  1. Peel and chop carrot.  Chop celery.  Slice tomatoes.
  2. In a bowl mix tuna fish, Miracle Whip, carrot, and celery.
  3. Place lettuce on a plate.  Top with tomatoes and tuna salad.  Add sugar snap peas.

Grade: A

Comments: Adding carrots to your tuna salad is a great way to get some additional veggies {and crunch!} into the mix.  This dish is just so healthy, and it is incredibly filling for how little food it really is.  You can easily add even more vegetables if you want!
