I am always looking for a healthy lunch that I can make quickly. One of the big perks of working from home is that I can throw something in the oven and come back to it later. However, yesterday my schedule was booked with conference calls, webinars, and a few “fires” as I call them. I had almost no time to eat.
Since I knew yesterday was going to be hectic, I planned for it, and I made sure to put something easy on the menu. Tomato sandwiches were one of my favorite lunches growing up, and I often took them for school lunch and ate them through the summer.
I have been craving vegetables during my pregnancy {much better than the sweets a lot of women crave}, so I was excited when I found a grown up version of the tomato sandwich that would take me less than 5 minutes to make between phone calls.
Quick Tomato Sandwich {from AllRecipes.com}
Ingredients:
- 2 tbs ketchup
- 1 tbs mayonnaise {I used Miracle Whip}
- 1/8 tbs salt
- 4 slices whole wheat bread
- 2 leaves lettuce
- 1 tomato sliced
Directions:
- In a small bowl, combine ketchup, mayonnaise, salt, and hot pepper sauce. Mix well. Meanwhile, toast bread in toaster. Spread mixture on all 4 slices of toast; set aside.



- Arrange lettuce leaves on the bread followed by 3 or 4 slices of tomato. Top with another piece of bread. Repeat with the other sandwich.

Comments: A very easy and healthy lunch full of flavor. I wasn’t sure how I felt about the ketchup until I tried it. Turns out the ketchup was a delicious addition to the sandwich! According to the recipe, there are only 207 calories in each sandwich {since I used Miracle Whip and not mayo I am guessing it was a little lower}. It goes great with an apple!

I notice you popped in some hot pepper sauce that wasn’t listed. Very good for winter.
