Tuna Salad Stuffed Tomatoes

Confession: I do not own a food processor.  I’m a little bit of a Kitchen Aid fanatic {read: I only use K.A. appliances}, and I don’t know if you’ve looked recently…but their food processor isn’t exactly inexpensive.  So, I generally try to avoid recipes that call for one, but this one seemed too delicious to skip.  I just modified the recipe to fit the tools I did have available.  I chopped the vegetables as small as I could without wasting a ton of time, and it worked out just fine.

Tuna Salad Stuffed Tomatoes {from Weight Watchers In 20 Minutes Cookbook}:

Ingredients:

  • 3 large tomatoes
  • 1 celery stalk
  • 1 carrot
  • 1 can water-packed tuna, drained and flaked
  • 1/8 cup lemon juice
  • 2 1/2 tbs fat-free mayo
  • 1/2 tsp black pepper

Directions:

  1. Slice off and discard the top third of each tomato.  With a small spoon, scoop out and discard the seeds and inner flesh; set the tomatoes aside.
  2. Peel and chop the carrots and celery into small pieces.  Mix into the tuna with mayo and pepper.  Stir until completely mixed.
  3. Fill the tomatoes evenly with the mixture.

Grade: B+

Comments: These were a great lunch!  Just filling enough without making me feel too full.  I would probably add more vegetables next time: onions, cucumbers, and maybe peppers.  My only complaint was that there wasn’t enough vegetables.  It would definitely make it a lot more tasty!

That looks really good actually. I love any recipe that involves stuffing veggies with veggies, especially if a tomato is involved! I have a cookbook by Ellie Krieger and she includes a recipe called Greek-Style Stuffed Peppers that has a bunch of veg and bulgur stuffed inside. Yum!

I saw your tweet about this on Twitter. Cooked tomatoes are a staple for me, as is flaked tuna. I’ve saved this recipe and will try it soon. When I do, I’ll probably use one or two big fleshy tomatoes and add a pinch of oregano.

Incidentally I am both a Kitchen Aid fan and a WordPress fan. We must have good taste in more than just food. ☺
