Cinnamon Raisin Biscuits

I love making breakfast during the week.  While I enjoy a bowl of oatmeal, there is something nice about waking up just a tad early to make sure Nathan has a hot breakfast.

These biscuits were a treat.  Absolutely delicious and so incredibly fast and easy.

Cinnamon Raisin Biscuits {slightly modified, but originally from AllRecipes.com}

Ingredients:

For biscuits:

  • 2 cups all purpose flour
  • 1 tbs baking powder
  • 1 tbs sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup shortening
  • 2/3 cup milk
  • 2/3 cup raisin

For icing:

  • 1 cup confectioners’ sugar
  • 1 1/2 tbs milk
  • 1/2 tsp vanilla extract

Directions:

  1. Preheat oven to 450 degrees.
  2. In a large bowl, combine flour, baking powder, sugar, cinnamon and salt. Cut in shortening until mixture resembles coarse crumbs. Add milk and raisins; stir only until combined.
  3. Pick up medium sized amounts of dough and roll in hands.  Press down gently to form a thick cookie shape.  Repeat for 10 biscuits.  Bake at 450 degrees F for 12-15 minutes or until golden.
  4. Meanwhile, combine the icing ingredients. Drizzle over warm biscuits.

Comments: These definitely do not taste like the ones that you buy at the store, and they shouldn’t!  The flour based biscuits are a little heavier, but they are delicious with the raisins and icing.  I paired them with a large cup of half-caff coffee with fat-free hazelnut creamer, and it was the perfect breakfast.  We’ll definitely make these again.  All of the ingredients are things we keep in the kitchen, so I can easily make them on a whim!

I am baking these rolls right now and if they taste half as good as they smell….I will be in heaven! (did I also mention the kids are in bed and I’m drinking my favorite tea and the rolls will be popping out of the oven right when “Idol” comes on….oh yes HEAVEN!)
