We were both very excited about this recipe. All week we talked about how good it would probably be. Maybe it is because we hyped it up in our heads, but it wasn’t that great.
It isn’t bad, and maybe it is my fault for using salmon instead of trout as recommended, but something wasn’t quite right.
Italian Fish and Veggie Pockets {from FoodNetwork.com}
Ingredients:
- 1 lemon zested
- 1.5 tsp salt and more for seasoning
- 1/2 tsp freshly ground pepper and more for seasoning
- 1.5 lbs sugar snap peas, stemmed
- 1 yellow bell pepper, sliced
- 1 orange bell pepper, sliced
- 1/2 cup white wine
- 1/4 cup lemon juice
- 4 tsp olive oil
- 4 trout fillets {I used 2 HUGE salmon fillets}
- 8 thin slices lemon {I skipped this and just used lemon juice}
- 1/4 cup chopped mint leaves
Directions:
- Preheat the oven to 350 degrees F. In a small bowl mix together the lemon zest, salt, and pepper. Set aside.
- Lay out the 4 sheets of aluminum foil. Place 1/4 of the sugar snap peas, 1/4 of the yellow bell peppers, and 1/4 of the orange bell peppers on each sheet of foil. Over each pile of vegetables drizzle 2 tablespoons of white wine, 1 tablespoon of lemon juice, and 1 teaspoon of olive oil. Sprinkle with salt and pepper and gently toss.


- Top each pile of seasoned vegetables with a piece of fish. Sprinkle the fish with some of the reserved lemon zest mixture. Top each fish with 2 slices of lemon.
- Fold up the foil into an air-tight packet. Place the foil packets in the oven and bake for 15 to 18 minutes depending on the thickness of the fish. Sprinkle the fish with mint just before serving.

Comments: Bland. Bland. Bland. If you are going to try this recipe, add a lot of spices. I’d probably add garlic, oregano, thyme, tarragon, and even some red pepper. It definitely needs something. The vegetables did turn out very delicious.
On the upside, we have a ton of salmon leftover! So, salmon salad sandwiches for lunch tomorrow it is!

I love the idea of cooking little packets to roast in the oven- no mess, and no cleanup! Certainly going to try this out. One small question though- how is a fish dish considered vegetarian?
