Pumpkin-Apple Bread

I stumbled across this recipe in one of my cookbooks that I hardly ever use, and it sounded so good I decided to make it.  I bought this Weight Watchers Cookbook about 2 years ago on clearance when I was on the search for some healthier versions of my favorite foods. It definitely is worth picking up if you are trying to make healthier meals.

This seemed like the perfect breakfast food for these cold winter mornings we’ve been having in Atlanta lately.

Pumpkin-Apple Bread {Weight Watchers New Complete Cookbook}

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1 large egg
  • 1 cup buttermilk {the recipe calls for low-fat, but I used regular}
  • 1 apple, peeled cored, and grated
  • 1/2 cup canned pumpkin puree
  • 1 tsp confectioners’ sugar

Directions:

  1. Preheat the oven to 350 degrees; spray a 9 x5 inch loaf pan with nonstick spray.
  2. In a large bowl, combine the flour, granulated sugar, baking powder, baking soda, salt, and add pumpkin pie spice.
  3. In a small bowl beat the egg; add the buttermilk, apple, and pumpkin.  Pour over the flour mixture; stir until just blended {do not overmix}.
  4. Spoon into the pan. 
  5. Bake until a toothpick inserted in the center comes out clean, about 1-1 1/4 hours.  Cool in the pan on a rack 10 minutes; remove from the pan and cool completely on the rack.  Dust with confectioners’ sugar.

Grade: A+ {we both snuck a piece tonight to try it!}

Comments: This bread is delicious!  It is so chewy and full of flavor.  The pumpkin and apple go so well together.  Smear a little butter on top of the bread, and you have a delicious breakfast food!  Tomorrow morning I plan on enjoying a piece with my half-caff morning coffee.

My bread was an epic fail. Everything looked OK going in, and even when it came out it was still good (if a bit crispy around the edges)… and then, after 10 minutes of sitting on a rack, the bread fell. And now it’s a very, um, solid mass of pumpkin goo dough.

Yep, I failed at bread. And that’s too bad – because it smells v. yummy.
