Homemade Tomato Soup

Inspired by this recipe, I decided to try to make some homemade tomato soup.  The weather in Atlanta lately reminds me of the nonsense I dealt with in Pennsylvania and Ohio.  I didn’t move to Georgia to see snow and ice on the ground!  Soup seemed like the perfect lunch to remedy my cold weather blues.

Homemade Tomato Soup

Ingredients:

  • 4 large red tomatoes
  • 4 carrots
  • 1 small onion
  • 2 chicken bouillon cubes
  • 1/2 tbs minced garlic
  • 1 tbs olive oil
  • 1/4 tsp ground black pepper
  • 1/2 cup mozzarella cheese

Directions:

  1. Peel onions and carrots.  Chop onion and set aside in a bowl.  Slice carrots and add them to the bowl with the onions.
  2. Peel the tomatoes.  Chop the tomatoes and set aside in a separate bowl.
  3. In a large soup pot, mix olive oil, onion, and carrots.  Sautee until onion and carrots are soft.
  4. Boil 2 cups of water.  Once the water is completed, add in 2 bouillon cubes.  Wait for them to dissolve into a broth.
  5. In the large soup pot with the oil, onion, and carrots, add the tomatoes, the broth, garlic, and black pepper.
  6. Bring the mixture to a boil.  After boiling for about 1 minute, reduce heat to low and simmer for 45 minutes uncovered.
  7. Serve with mozzarella cheese!

Comments: Both Nathan and I loved this!  It was a really filling lunch that is so incredibly healthy.  The only thing that could have made it better was more spices.  We’ll definitely make it again, but I think I’ll add Italian seasoning, oregano, and probably some paparika.
