After making brunch on New Year’s Day, I had a lot of leftover items that needed to be used. So, after a quick glance at my refrigerator and cabinets, I realized I could make a great scramble complete with turkey bacon and mimosas {made with sparkling grape juice of course!}.
Italian Vegetable Scramble
Ingredients:
- 5 eggs
- 1 roma tomato, chopped
- 3 black olives, sliced
- 2 tbs basil pesto
- 1/2 cup mozzarella cheese
- 1/4 cup Parmesan cheese
- 1 tbs garlic, chopped
- 1/4 tsp tarragon
Directions:
- Whisk eggs and put them in a non-stick large pan. Cook on medium heat.

- After about 2 minutes, add in tomatoes, olives, basil pesto, garlic, tarragon, and top with mozzarella and Parmesan cheese. Cook on medium-high until cooked thoroughly.

- Serve with turkey bacon {for Nathan} and mimosas!

Comments: This definitely needed more vegetables, but I just needed to use up what I could find. I think I’d add peppers, mushrooms, and onions if I had them available. The basil pesto was a great touch, and it hadded a ton of flavor to the dish.
