Easy Sunday Breakfast for 2: Italian Vegetable Scramble

After making brunch on New Year’s Day, I had a lot of leftover items that needed to be used.  So, after a quick glance at my refrigerator and cabinets, I realized I could make a great scramble complete with turkey bacon and mimosas {made with sparkling grape juice of course!}.

Italian Vegetable Scramble

Ingredients:

  • 5 eggs
  • 1 roma tomato, chopped
  • 3 black olives, sliced
  • 2 tbs basil pesto
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tbs garlic, chopped
  • 1/4 tsp tarragon

Directions:

  1. Whisk eggs and put them in a non-stick large pan.  Cook on medium heat.
  2. After about 2 minutes, add in tomatoes, olives, basil pesto, garlic, tarragon, and top with mozzarella and Parmesan cheese.  Cook on medium-high until cooked thoroughly.
  3. Serve with turkey bacon {for Nathan} and mimosas!

Grade: B

Comments: This definitely needed more vegetables, but I just needed to use up what I could find.  I think I’d add peppers, mushrooms, and onions if I had them available.  The basil pesto was a great touch, and it hadded a ton of flavor to the dish.
