5 minute taco salad recipe

I sometimes think the best meals are the ones you make when randomly pulling out ingredients from your cabinets and refrigerator.  The meals aren’t fancy, but on a day like today we just needed comfort food {um, neverending rain, I am talking to you}.

Enter tonight’s dinner.  The eptiome of the “throw together” meal.

5 minute Taco Salad

Ingredients:

  • 1/2 can yellow corn
  • 1/2 can black olives
  • 1 can fat free refried beans
  • bagged salad
  • 1/4 cup fat free sour cream
  • salsa
  • 1/3 cup light shredded Mexican cheese mix
  • corn chips

Directions:

  1. Cook refried beans.
  2. In the meantime, put lettuce on plate/in bowl.
  3. Top with yellow corn and olives.  Then add refried beans. 
  4. Finally, top with sour cream, salsa, and cheese.
  5. Serve with corn chips.

Grade: B

Comments: Obviously if your kitchen isn’t as barren as mine after a week of out-of-town vacations then you can add a lot more.  I would love to add some peppers, rice, etc, but those just weren’t in the cabinets.  Don’t worry…I made it to the grocery last night. I definitely think it is a great quick meal for those rainy days we’ve been having lately.

Great idea this. It is always difficult to thin of varied things to cook especially for a hungry family and some of the ideas here and elsewhere on your site have given me some great ideas so thak you!
