I sometimes think the best meals are the ones you make when randomly pulling out ingredients from your cabinets and refrigerator. The meals aren’t fancy, but on a day like today we just needed comfort food {um, neverending rain, I am talking to you}.
Enter tonight’s dinner. The eptiome of the “throw together” meal.
5 minute Taco Salad
Ingredients:
- 1/2 can yellow corn
- 1/2 can black olives
- 1 can fat free refried beans
- bagged salad
- 1/4 cup fat free sour cream
- salsa
- 1/3 cup light shredded Mexican cheese mix
- corn chips
Directions:
- Cook refried beans.

- In the meantime, put lettuce on plate/in bowl.

- Top with yellow corn and olives. Then add refried beans.

- Finally, top with sour cream, salsa, and cheese.

- Serve with corn chips.

Grade: B
Comments: Obviously if your kitchen isn’t as barren as mine after a week of out-of-town vacations then you can add a lot more. I would love to add some peppers, rice, etc, but those just weren’t in the cabinets. Don’t worry…I made it to the grocery last night. I definitely think it is a great quick meal for those rainy days we’ve been having lately.
