black bean soup

Where has the time gone?  I can’t believe it has been 10 days since I posted.  I was in Chicago last weekend for Ann’s wedding, and I have just been on-the-go the past 2 weeks!

Today’s recipe was given to me by my friend Anna.  I only made one change, so I am posting my recipe.  I will put her original info in parentheses.

Ingredients:

  • 1 can black beans (Anna calls for 2)
  • 2 cans diced tomatoes (Anna calls for 1)
  • 1 can yellow corn
  • 1/2 onion, diced
  • 1/2 cup salsa
  • 1 cup Mexican mix cheese
  • 1/4 cup fat free sour cream

Directions:

  1. Mix undrained beans, corn, and tomatoes into a pot.  Cook on medium-high.013
  2. After 5 minutes add salsa and stir for another 3-4 minutes.014
  3. Pour into bowl and top with cheese and sour cream.015

Grade: A

Comments: We ate this with tortilla chips, and it was EXCELLENT!  It is so filling, and it is so healthy.  We were both full after just a small bowl.  I think I would add some peppers next time just to get some more vegetables in there.
