We’re still on an asparagus kick here. So, what better way to make pasta than to add some of my favorite veggies!
To make the vegetables, you should use the recipe for balsamic asparagus & red peppers. For this recipe add 1/3 cup chopped carrots into the veggie mix!
To make the pasta:
Ingredients:
- 1 box of linguine
- 1 cup of red pasta sauce
- 1 tbs olive oil
- 1 tbs vegetable broth
- 1 chicken breast
Directions:
- Cook pasta according to directions.
- Put red sauce in a small pot. Cook until hot, stirring occasionally.

- Mix olive oil and vegetable broth in a small container. Set aside.

- Cook chicken breast on indoor grill. Flip after about 7 minutes. Cook for 15 total.
For him: Pasta, veggies, and chicken breast.
For her: Pasta, veggies, and olive oil mixture.
Grade: B
Comments: It needed more spice. I also probably would have used a different pasta or maybe even couscous. I just felt like the pasta I used was too thick and heavy for this meal.
